This 2-day chocolate course will cover a wide range of techniques necessary to create fine chocolates including tempering, cooling, storing and how to extend the shelf life of artisan chocolates.
Students will be presented guidelines in selecting fine ingredients, explore different types and textures of chocolates and proper techniques in flavor fusions. Make ganache fillings for molded and dipped bonbons and learn the skills necessary to craft their own uniquely flavored chocolates. Students will also learn how to artfully package their confections to sell or as a party favor.
