WHAT ARE THE ADVANTAGES OF USING THESE PANS AS COMPARED TO CUTTING IT LIKE I ALWAYS DO?

You save time, money & product. Using the Petal Crafts Topsy Turvy Cake Pans (TM) makes it so much faster to make a whimsical cake design. Cake artists spends hours and hours of frustrating time to trim the cake and make sure that the angles are right. The cake waste is another issue that is solved with this invention. Because you don't have to cut the cake, you don't end up so much cake waste!

HOW DO I USE THESE PANS?

Just like any other cake pans you may have in your pantry. Follow the directions of your favorite cake recipe. It is advisable not to fill the pan more than half way of the shortest side. You may need to use a heating core on the center of the 10" and the 12" topsy turvy pans for even, faster baking. Ovens have varying factors that affects the baking of cake batters but based on my experience, the cake batter bakes about 10 to 15 minutes longer using these pans as compared to a regular flat-bottomed pans. The Petal Crafts topsy turvy pans bake from the outside to the inside of the cake, so the shallow side will not bake any faster nor will it come out over-baked as compared to the deeper side of the cake.

I TRIED TO BAKE USING THESE PANS BUT THE CENTER COMES OUT SOUPY, WHAT DO I DO?

This may happen on the larger sizes of the pan like the 10 and the 12 inches diameter. You may use a 2" heating core placed in the middle and pour the cake batter around and in it. You may also try to lower down the baking temperature by 25 degrees. Since most cake recipes call for a baking temperature of 350, set your oven at a lower temperature and check your oven thermometer (a must!) to make sure that the temperature inside your oven is 325 or even 315. Your cake may take longer to bake but it will bake the middle part just the same time as the sides cook through.

I TRIED TO BAKE USING THESE PANS BUT IT DOMES UP IN THE MIDDLE, WHAT DO I DO?

This is a problem that most bakers come upon even when using a regular cake pan. Doming happens because the side of your cake bakes faster than the middle and stops rising. Most just trim it off, which is a waste, some use the baking strip, which prevents the cake from doming but prolongs the baking process even more and top edge of the cake burns since it is not covered by the strip. One thing that I learned from my Vienese pastry chef is...are you ready for this?.... putting a lid on the cake pan. Yes! It solves the problem of doming, having a raw center and cake comes out prefectly baked!

THE CAKES COME OUT SHORTER THAN WHAT I WOULD LIKE, WHAT DO I DO?

Since you only need the angled cake at the very top of each tier, you may place it on top of a regular shaped and leveled cake to achieve the height that you need.

HOW MANY PEOPLE DOES A 4-TIERED TOPSY TURVY CAKE SERVE?

The wedding cake serving-size guide is as follows:

6" - 12 servings
8" - 24 servings
10" - 36 servings
12" - 48 servings


4-Tiered Topsy turvy cake will serve approximately 110 to 120 guests.
